White Chocolate Raspberry Protein Cheesecake

Ingredients

  • 4 - chocolate graham crackers
  • 1tbsp. - honey
  • 1tbsp. - coconut oil
  • - Filling
  • 2tbsp. - fat-free cream cheese
  • 1c - plain Greek yogurt
  • 1 - scoop French Vanilla IdealLean Protein
  • 0.5package - sugar-free white chocolate pudding mix
  • 0.5c - baking stevia
  • 1 - egg

Instructions

  1. Preheat oven to 350 degrees and spray 6 muffin tins with nonstick cooking spray. Blend graham crackers into crumbs. Mix with honey and coconut oil and press down into muffin tins to create crust. Set aside.

  2. In a mixing bowl, combine all remaining ingredients (except raspberries) until smooth. Pour on top of crusts and bake for 20-25 minutes.

  3. Remove from oven and let cool. Add 2 raspberries to the top of each mini cheesecake & enjoy! 1 Cheesecake is a serving.
