Strawberry Macaroons

Ingredients

  • 1cup - unsweetened coconut flakes, finely shredded
  • 1tbsp - coconut flour
  • 1 - scoop Strawberries 'N Cream IdealLean
  • 3 - egg whites
  • 1tbsp - maple syrup
  • 0.25cup - freeze dried strawberries, crumbled
  • 0.33333333333333cup - dark chocolate chips
  • 1cup - unsweetened coconut flakes, finely shredded
  • 1tbsp - coconut flour
  • 1 - scoop Strawberries 'N Cream IdealLean Protein
  • 3 - egg whites
  • 1tbsp - maple syrup
  • 0.25cup - freeze dried strawberries, crumbled
  • 0.33333333333333cup - dark chocolate chips

Instructions

  1. Preheat oven to 350 degrees. In a medium bowl, coconut, coconut flour, protein, egg whites, and maple syrup. Stir to combine. Fold in the freeze dried strawberries.

  2. Line a baking sheet with parchment paper. Using a small cookie scoop, divide the dough to make 10 cookie mounds on the parchment lined baking sheet. They can be place close together since they don’t spread.

  3. Bake in the 350 degree oven for 15 minutes, or until macaroons are slightly golden on the outside but still a little soft in the middle. Remove and cool on baking sheet. Melt chocolate in the microwave for about 70 seconds. Dip the bottoms of the cookies with melted chocolate and set dipped cookies on parchment paper to let chocolate harden. Enjoy!
