Pumpkin Spice Cookies

Ingredients

  • 1c - old fashioned oats
  • 0.5c - blanched almond flour
  • 1 - scoop IdealLean French Vanilla Protein
  • 0.5tsp. - baking soda
  • 0.5tsp. - baking powder
  • 0.25tsp. - salt
  • 0.5tsp. - cinnamon
  • 0.125tsp. - nutmeg
  • - pinch of cloves
  • 0.5c - pumpkin puree
  • 0.25c - coconut sugar
  • 2tbsp. - coconut oil, melted
  • 1tsp. - vanilla extract
  • 1 - egg
  • 2tbsp. - mini chocolate chips

Instructions

  1. Preheat oven to 350 degrees. Mix oats, almond flour, protein, baking soda and powder, salt, cinnamon, nutmeg, and cloves. In a separate bowl, mix pumpkin puree, coconut sugar, coconut oil, vanilla extract, and egg until smooth.

  2. Combine wet and dry ingredients and fold in chocolate chips.

  3. Spoon onto baking sheet and bake for 8-10 minutes. Enjoy!

  4. Makes 21 cookies. Serving size: 2 cookies. Calories per serving: 130 /Protein 5g / Carbs 14g / Fat 7g
