Peach Cobbler Pancakes


  • 1 cup oat flour
  • 1 scoop Peaches 'N Cream IdealLean Protein (French Vanilla works too)
  • 2 tsp baking powder
  • 1 tsp ground cinnamon
  • dash of salt
  • 1 tbsp coconut oil, melted & cooled
  • 1 tsp vanilla extract
  • 0.5 cup unsweetened almond milk
  • 0.5 cup finely diced peaches (fresh or canned in 100% juice and drained)


  1. Whisk together the oat flour, protein powder, baking powder, cinnamon, and salt in a medium bowl.

  2. In a separate bowl, stir together the coconut oil, vanilla, and almond milk. Add to the dry ingredients and stir until combined. Do not over mix. Gently fold in the peaches.

  3. Lightly coat a large nonstick pan or griddle with nonstick cooking spray, and preheat over medium heat.

  4. Pour the batter onto the griddle into 6 pancakes. Cook for 1-2 minutes, or until the edges start to brown. Flip and cook for another minute or two. Repeat until all the batter is used up.
