Peach Upside Down Mini Cakes
- - Cake:
- 2 - eggs
- 1cup - baking stevia
- 0.5cup - peach juice
- 0.33333333333333cup - coconut flour
- 1 - Scoop Peaches ‘N Cream IdealLean Protein
- 1tsp - baking powder
- 0.25tsp - salt
- - Topping:
- 2tbsp - coconut oil
- 0.5cup - light brown sugar
- 12 - canned peach slices in natural juice
Preheat oven to 350 degrees F. Mix all cake ingredients until just combined.
In a separate bowl, mix coconut oil and brown sugar. Spray 6 muffin tins with nonstick cooking spray. Place 2 peach slices in each muffin tin and top with brown sugar mixture, then cake batter.
Bake for 25-30 minutes or until toothpick comes out clean. Enjoy!
