Coconut Tres Leches Mini Cakes

Ingredients

  • - Cakes
  • 1 - medium banana, mashed
  • 2tbsp - unsweetened applesauce
  • 2tbsp - coconut sugar
  • 1 - egg
  • 1tsp - vanilla extract
  • 1tbsp - unsweetened coconut milk
  • - ⅓ cup white whole wheat flour
  • 1 - scoop IdealLean Cake Batter Protein
  • 1tsp - baking powder
  • 0.125tsp - salt
  • - Filling
  • 0.25cup - canned coconut milk
  • 3tbsp - lowfat sweetened condensed milk
  • 6tbsp - fat free whipped cream

Instructions

  1. Preheat oven to 350 degrees F.

  2. Spray 6 cupcake tins with nonstick spray and set aside.

  3. Mix mashed banana, applesauce, coconut sugar, egg, and vanilla until combined.

  4. In a separate bowl, mix flour, protein, baking powder and salt. Add to wet ingredients and mix until smooth.

  5. Fill cupcake tins 2/3rds full (should fill about 6) and bake for 15-20 minutes, or until a toothpick comes out clean.

  6. Remove from oven and let cool.

  7. Remove from tins and poke holes in each cupcake.

  8. Pour coconut milk and sweetened condensed milk, cover, and refrigerate for 2 hours.

  9. Top each cupcake with whipped cream and banana. Enjoy!
