Coconut Rice Pudding
- 2cup - water
- 1cup - brown rice
- 0.75cup - unsweetened coconut milk
- 3tbsp - coconut sugar
- 0.5tsp - vanilla extract
- 0.25tsp - cinnamon
Bring water to a boil and add rice.
Cover and simmer for 30-45 minutes, or until water is absorbed.
Stir in coconut milk, coconut sugar, vanilla extract, and cinnamon and simmer for 5 more minutes. Pudding should be thick.
Enjoy hot or cold. Store in refrigerator.
