Balsamic Quinoa & Caprese Lunchbox
- 0.25c - cherry tomatoes
- 2 - fresh mozzarella balls
- 2 - fresh basil leaves
- 1c - cooked quinoa
- 4oz - shredded cooked chicken
- 2tbsp. - balsamic glaze
Layer quinoa and cooked chicken. Layer 2 cherry tomatoes, mozzarella, and basil on small skewers and pack into Tupperware. Add remaining tomatoes. Drizzle with balsamic glaze when ready to eat. Enjoy!
