Balsamic Quinoa & Caprese Lunchbox

Ingredients

  • 0.25 c cherry tomatoes
  • 2 fresh mozzarella balls
  • 2 fresh basil leaves
  • 1 c cooked quinoa
  • 4 oz shredded cooked chicken
  • 2 tbsp. balsamic glaze

Method

  1. Layer quinoa and cooked chicken. Layer 2 cherry tomatoes, mozzarella, and basil on small skewers and pack into Tupperware. Add remaining tomatoes. Drizzle with balsamic glaze when ready to eat. Enjoy!
