Apple Spice Cookies

Ingredients

  • 1cup - rolled oats
  • 0.5cup - whole wheat white flour
  • 1 - scoop French Vanilla IdealLean Protein
  • 1tsp - baking powder
  • 1.5tsp - cinnamon
  • 0.5tsp - nutmeg
  • 0.125tsp - salt
  • 2tbsp - coconut oil, melted & cooled
  • 1 - egg
  • 0.25cup - honey
  • 1cup - chopped apple, peeled and cored

Instructions

  1. Whisk together the oats, flour, vanilla protein, baking powder, cinnamon, nutmeg, and salt in a medium bowl. In a separate bowl, whisk together the coconut oil, and egg. Stir in the honey. Add in the flour mixture, stirring just until incorporated. Fold in the chopped apple. Chill for 30 minutes.

  2. Preheat the oven to 325°F, and line a baking sheet with parchment paper.

  3. Drop the cookie dough into 15 rounded scoops onto the prepared sheet, and flatten slightly. Bake at 325°F for 12 minutes. Cool on the pan for 10 minutes before turning out onto a wire rack.
